I confess, I’m a bona-fide comic book geek. One of my favorite comic book characters is The Atom, who is played by Brandon Routh in the upcoming Legends of Tomorrow television show on the CW. Ray Palmer, the man in the Atom suit, has a superpower to shrink objects. By using his miniaturizing powers, he becomes a hero by fighting the bad guys. He proves that sometimes the tiniest things are the most powerful, just like the superfood microgreens! These tiny greens are the equivalent of The Atom in the food and nutrition world.
MICROGREENS BASICS:
Microgreens are small seedlings of herbs and vegetables that are packed with nutrition. These young plants are usually less than 14 days old. Chefs love to garnish their dishes with fresh microgreens in order to add beauty, flavor and texture. Just sprinkle a handful of these beauties in your dishes to make them look super fancy and taste delicious!
SUPERFOOD MICROGREENS:
Microgreens may have four to six times more nutrients than their adult counterparts. A wide variety of microgreens can be found, ranging from cilantro to garnet amaranth. Different microgreens are loaded with different nutrients- red cabbage microgreens have high levels of Vitamin C, whereas daikon radish microgreens have high levels of Vitamin E. Therefore, it is better to incorporate a variety of your favorite microgreens into your diet.

Load up on phytochemicals and vitamins by including these miniature, powerful, and beautiful microgreens in your diet! When buying microgreens, look for dark and vibrant colors because they have the most nutrients.
